My recipe for these protein-packed blueberry sheet pancakes will make a whole sheet of pancakes in less than 30 minutes. I would love to be able to say that I’m a morning person and that I’m up before the whole house preparing for the day ahead. Butttt..Mornings are a struggle for me…
So, when it comes to breakfast and staying on my fitness goals, it’s best when I have quick and easy breakfast options that I can just throw in the microwave. It’s too much for me to mix the batter, heat the griddle, also throw my turkey bacon on the griddle and just stand in one place while I try to prevent my 4 and 7 year old from destroying things at 7am—all while I’m making 3 other meals that are all different than mine and making sure my food doesn’t burn!
Because of these meal-prep friendly blueberry protein sheet pancakes, I am able to wake up, do things after I throw a couple of these blueberry pancakes on a plate for less than a minute, and pop some turkey bacon in the air fryer. (If you haven’t tried using or have an air fryer, it’s healthier and makes living a fit life so much easier cause it turns off automatically!!!) I can walk away for 5 minutes without anything burning or any added morning stress as I prepare for the day ahead.
Benefits of make-ahead breakfast sheet pancakes:
The great thing about these protein blueberry sheet pancakes is that my youngest daughter doesn’t mind the taste of these mostly whole-grain, low sugar, and high protein blueberry sheet pancakes. She also doesn’t mind eating turkey bacon which is a win-win for the both of us. So, at-least I have 2 meals down and only 2 more meals to make in the morning. Also, these can double as a mid-day snack or pre-workout snack.
What inspired me to make a whole sheet of blueberry sheet pancakes?
What actually inspired me to make these sheet pancakes was scrolling through Pinterest (where I get 50% of all my inspirations in life…anyone else?) Funny thing is that I was actually searching for protein blueberry mug cakes.
Reese Woods’ recipe looked great…if I wasn’t currently trying to cut down on sugar, especially refined.
I’m also pretty sure those protein-packed blueberry muffins came up on my timeline because of my recent post on my Pinterest account: Kodiak Cakes : Mini Lemon Almond Poppy Seed Muffins. Dairy-Free Milk& Low to No Refined Sugar!
Her recipe called for skim milk and brown sugar. I tend to stay away from cow milk as much as possible and usually drink almond milk. I am also trying to stay away from refined sugars because I would like to put more beneficial things into my body. Like, if there’s no benefit, I try to make it a point to not eat it. There’s always a healthier alternative.
Why you should limit and stay away from refined sugars as much as possible… (white, brown, turbinado, cane, etc.)
Sugar is associated with possibly creating an imbalance in your gut health which could contribute to poor digestion. It also increases the risk of chronic diseases, such as Type 2 Diabetes and heart disease.
How sugar may get in the way of your weight loss or fat loss goals:
If you eat excess sugar, regardless of where it comes from (fruit, honey, refined sugars, etc.), that excess sugar will turn in to fat. That is why I didn’t add much honey in my recipe for these blueberry protein sheet pancakes. If you are looking for a super sweet pancake, this is not the recipe for you unless you add sugar to taste or eat the blueberry pancakes with syrup.
How to replace refined sugars in your diet:
In place of the sugar, I used honey. Honey contains more nutrients and is less processed than sugar. Honey also contains minerals such as magnesium and potassium. It also has trace amounts of amino acids, antioxidants, enzymes and vitamins. Not all honey is created equal though. It’s better to have organic and raw honey since it does contain more antioxidants and enzymes for your body.
Alternatives: You can of course stick with brown sugar. A nice alternative would be coconut palm sugar. If you’re trying to stay lower-calorie, you can always do stevia ( I can’t stand the taste!) I’ve heard the Swerve 0-cal sugar is a better-tasting alternative than stevia. I just have my doubts and don’t plan on spending almost 10 dollars for a bag of it any time soon.
Kodiak Cakes Whole Grain Buttermilk Mix can be found online on Target.com. Amazon and Walmart also carry it. I just prefer Target because their shipping time is still 2 days for me even during COVID. Amazon has been taking longer than usual. I’m just not a big supporter of Walmart as a company. If you can’t find this particular mix, Krusteaz carries a protein-packed pancake mix that should work ok.
1up Nutrition Blueberry Muffin Whey Protein Powder can be purchased from 1upnutrition.com. I have baked and come up with so many recipes with their different flavors. I typically stick with their vegan options, which used to be only chocolate and vanilla. They now have 3 new vegan proteins in the banana bread flavor, key lime avocado, caramel toffee macchiato, and peanut butter! The blueberry muffin protein, however, is not vegan.

Protein-Packed Blueberry Sheet Pancakes
- Sheet Pan
- Parchment Paper
- Mixing Bowl
- Measuring Cups
- 2 cups Kodiak Cakes Buttermilk Mix
- 1 scoop 1up Nutrition's Blueberry Muffin Whey Protein Powder
- 1 large egg
- 1 cup Vanilla Almond Milk
- 3/4 cup Frozen or Fresh Blueberries
- 1/2 cup Unsweetened Applesauce
- 1 tsp Pure Vanilla Extract
- 1/4 cup Organic Honey
- Pre-Heat oven to 375F.
- Combine all wet ingredients in one bowl and mix well.
- Slowly add all the dry ingredients and mix well. Batter should be thicker than normal pancake batter.
- Add 1/2 cup of the blueberries and fold in to the mix.
- Cover the sheet pan/cookie sheet with parchment paper. Spray with non-stick oil.
- Spread batter evenly all over the pan. Sprinkle the rest of the blueberries over the top.
- Bake 15-20 mins until it passes the toothpick in the center test.
- Cut your pieces up in to even squares. Let cool before refrigerating or freezing them.
